This recipe for a fantastically refreshing salad comes from SimplyRecipes. I love this salad!
Ingredients:
1/2 cup walnuts, chopped and slightly toasted
1/2 cup celery, thinly sliced
1/2 cup seedless grapes, sliced or 1/4 cup raisins
1 sweet apple, cored and chopped
3 tablespoons mayonnaise
1 tablespoon fresh lemon juice
salt
pepper
lettuce
Directions:
1. Whisk together the mayonnaise (or yogurt) and the lemon juice in medium bowl.
2. Add salt and pepper.
3. Mix in the apple, celery, grapes (or raisins) and walnuts.
4. Serve on a bed of fresh lettuce (I like romaine especially with this).
