Ingredients:
8 oz. rotini
3 c. chopped apples
1 t. lemon juice
3/4 c. chopped celery
1 c. cooked chicken
1/2 c. raisins
1/2 c. chopped walnuts
1 c. reduced-fat mayonnaise
1/2 tsp. onion powder
1/4 tsp. garlic powder
1/4 tsp. salt
1/4 tsp. black pepper
Directions:
1. Bring 3 qt. lightly salted water to a boil in a covered 4 1/2 qt. or larger pot. When the water reaches a rapid boil, add the pasta and cook, uncovered, just until firm-tender, following the package directions. When the pasta is done, drain it in a colander, and throw in 2 handfuls of ice cubes. Rinse the pasta under cold running tap water and toss with the ice until it reaches cool room temperature, about 2 minutes. Drain well, removing any unmelted ice.
2. Core the apples and cut them (unpeeled) into bite-size pieces. Place the apple pieces in a large (about 3-qt. serving bowl). Toss with the lemon juice. Cut the celery into bite-size pieces and add them to the bowl. Add the chicken chunks, raisins and nuts. Add the pasta.
3. Mix together the mayonnaise, onion powder, garlic powder, salt, and black pepper. Add to the bowl and stir until combined. Serve at once, or refrigerate until ready to serve, up to 3 hours.
