This unusual cake is an adaptation of a recipe from Harriet Kofalk's The Peaceful Cook.? When you read the very short list of ingredients, you may wonder how anything this simple could taste good.? The cake contains no salt, no vanilla, no butter or eggs, but it is good-and molasses offers us a nourishing tonic for the last cold days of early spring. Read more . This tasty cake (that looks so like the slumbering earth) is hiding a wonderful gift, just as the earth is gestating the waking seeds and the first stirrings of spring.
Ingredients:
1 1/2 cup whole wheat flour
1 cup unbleached white flour
1 1/2 teaspoons baking soda
1/2 cup vegetable oil
1/2 cup unsulphured molasses
1/2 cup hot water
1/4 cup blackstrap molasses
surprises--non- meltable! -- for hiding inside cake (optional)
a clean coin
a small polished ring
a ring
a small gold or silver charm
yogurt or ice cream (optional)
Directions:
1. Preheat the over to 375 degrees F.
2. In a large bowl, combine both flours and baking soda.
3. Stir n the vegetable oil and the unsulphured molasses.
4. This mixture will resemble crumb topping.
5. remove 1 cup of it and reserve.
6. In a small bowl, combine the hot water and the blackstrap molasses.
7. Add to the flour mixture in the large bowl and mix well.
8. Now is the time, if you desire, to stir in any one or more of the non-meltable surprises.
9. Finding one of them in your piece of cake is good luck-but be sure to warn your eating audience, to prevent accidental choking or broken teeth!
10. Pour batter into a buttered 9-inch square baking pan, sprinkle with the reserved crumb topping, and bake for 30 minutes, or until a toothpick inserted in the center comes out clean.
11. Serve warm, with a dollop of yogurt or ice cream, if you like.
12. You could also top this cake with lit candles, one for each person who will be enjoying it.
