Such a delightbul meatball recipe. This recipe can be doubled for larger crowds, Delicious!!
Ingredients:
1 1/2 lbs ground beef
2/3 cup cracker crumb
1/3 cup minced onion
1 egg
1 1/2 teaspoons salt
1/2 teaspoon ginger
1/4 cup milk
2 tablespoons cornstarch
1/2 cup brown sugar, packed
1 (13 ounce) can pineapple bits, drained, saving the juice
1/3 cup vinegar
1 tablespoon soy sauce
1/2 cup chopped green pepper (optional)
Directions:
1. Mixz meat, crumbs, onion, egg, salt, ginger and milk. Shape mixture into small balls.
2. Melt 1 tablespoons shortening in a large skillet. Brown and cook meatballs. Pour fat from skillet.
3. Mix cornstarch and sugar. Stir in reserved syrup from drained pineapple bits, vinegar and soy sauce until smooth.
4. Cook over medium heat, stirring constantly until the mixture thickens and boils.
5. Boil and stir for 1 minute. Add meatballs, pineapple bits and green pepper, if using. heat thoroughly.
