Wagamama Salad Dressing

This is the dressing used at the Wagamama restaurants.
Ingredients:
2 teaspoons shallots, finely chopped
1 inch piece gingerroot, peeled and grated
1 small garlic clove, peeled and finely chopped
1 1/2 tablespoons rice vinegar
1 tablespoon ketchup
1 tablespoon water
3 1/2 ounces vegetable oil
3 tablespoons light soy sauce
Directions:
1. Whisk all ingredients together in a small bowl or screwtop jar and set aside. Can be kept in the fridge for a few days.
