Waffles from Freshly Ground Flour

Moist and tender! Fresh ground flour makes a huge difference. Great with sliced bananas on top.
Ingredients:
3 eggs
1 1/2 cups 1% low-fat milk
3 tablespoons melted butter
2 1/4 cups whole wheat flour (freshly ground from 1.8 cups soft white wheat berries)
4 1/2 teaspoons baking powder
3 teaspoons sugar
3/4 teaspoon salt
Directions:
1. Preheat waffle iron. Great in a Belgian waffle iron!
2. Beat eggs.
3. Mix wet ingredients in one bowl.
4. Mix dry ingredients in second bowl.
5. Gently mix wet and dry til just moistened. Do not over mix.
6. Bake in hot waffle iron til lightly browned and crisp (about 4-5 minutes in mine).
