The cinnamon and pecans really give this waffle a decadent flavor, and the egg whites keep it light and fluffy. It's a little bit extra work than your typical waffle recipe. If you're serving breakfast for guests (especially over the holidays) or want to make someone's birthday extra special-this is a great waffle. I found it in Southern Sideboards/Southern Living Hall of Fame, Recipes from the Junior League of Jackson, Mississippi. Ewing Seligman, Los Angeles, CA.
Ingredients:
3 eggs, separated
2 cups sour cream
1 cup flour
1/8 teaspoon salt
1 teaspoon sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 tablespoon oil
1 teaspoon ground cinnamon
1/2 cup chopped pecans
1 teaspoon vanilla
Directions:
1. Mix egg yolks in bowl with sour cream.
2. Sift together flour, salt, sugar, baking powder, and soda.
3. Blend sifted ingredients in with eggs and cream.
4. Add oil, cinnamon, nuts, and vanilla.
5. Beat egg whites until stiff and fold in gently.
6. Bake in waffle iron.
7. Will keep in warm oven on open racks.
8. Freeze in plastic bags (if you actually have any left).
