VODKA SPIKED GAZPACHO This recipe came from an estate sale. I obtained it when I purchased the family collection from the McLean Estate in Irving, Texas in 1982.
Ingredients:
2 pounds ripe tomatoes cored and chopped
2 tablespoons red wine vinegar
1 small red onion chopped
2 scallions chopped
1 hot green chili chopped
2 garlic cloves finely minced
1 small cucumber chopped
1/4 cup chopped coriander leaves
2 tablespoon chopped fresh basil leaves
juice of 1 lime
1/4 cup olive oil
1/4 cup vodka
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 ripe avocado sliced
Directions:
1. In large serving bowl combine all ingredients except avocado then serve with avocado slices.
