Vodka Sauce With Fresh Pasta And Herbs

A fresh and easy meal to make. Serve with Cheese and Olive Bread, Crisp Salad and of course a great wine! Enjoy! :)
Ingredients:
* 4 tablespoons butter
* 2 cups heavy cream
* 1/3 cup vodka
* 1/2 teaspoon salt
* fresh ground pepper
* pinch cayenne
* 1/2 cup fresh grated parmesan cheese
* 1 cup fresh mixed herbs, finely chopped ( basil, italian parsley and chives). save some for garnish.
* 1 lb fresh pasta, you can choose whatever you like.
*optional: a touch of chopped roasted red pepper
Directions:
1. Melt butter in a large skillet.
2. Add cream, salt, pepper, vodka and cayenne and simmer for 15 minutes or until sauce is slightly reduced and thickened.
3. Whisk in Parmesan and fresh herbs and simmer for another 5 minutes.
4. Toss pasta and sauce together and serve immediately.
5. Sprinkle a few of the remaining chopped herbs on top.
