Notes: Up to 1 week ahead, make relish; cover and chill. Stir before serving.
Ingredients:
3 cups (12-oz. package) fresh or thawed frozen cranberries
1 fresh jalapeƱo chili, stemmed, seeded, and chopped
3/4 cup chopped onion
2 tablespoons chopped fresh ginger
1/2 cup fresh cilantro
5 tablespoons lime juice
2 teaspoons grated orange peel
1/4 cup tequila (optional)
3 tablespoons orange-flavor liqueur or 1 more tablespoon grated orange peel
salt
Directions:
1. Sort cranberries and discard any soft or decayed fruit. Rinse berries.
2. In a food processor, whirl cranberries, chili, onion, ginger, cilantro, lime juice, orange peel, tequila, and orange-flavor liqueur until finely chopped. Or grind through a food chopper with a fine blade. Add salt to taste.
