These muffins are easy to make and balance of muffin mix will keep up to 3 months in the refrigerator. Bake them fresh for breakfast, or anytime!
Ingredients:
4 eggs beaten
1 qt. buttermilk
5 cups flour
3 cups sugar
5 tsp. soda
2 tsp. salt
1 cup oil (if watching calories, use 1 cup applesauce in place of oil)
1 box raisin bran (15 oz.)
Directions:
1. Beat together eggs and buttermilk.
2. Once you have beat together eggs and buttermik mix all other ingredients together. Set in refrigerator for 24 hours. Spray cooking spray or oil in muffin tins. Fill muffin tins about halfway with batter. Bake at 425 for 20 minutes. Cool on rack for a few minutes before serving.
3. Cutting calories? Don't forget, you can substitute the oil for applesauce. Texture is slightly different, but just as good! Hope you enjoy!
