This is a dish my grandmother passed down to my mom. It's an acquired tasteā€”if you didn't grow up eating, you may not like it. But if you like salt and vinegar potato chips, this is the mashed potato version, so give it a shot! Read more !
Ingredients:
4 medium potatoes, peeled and sliced
1 small onion, diced
sprig of salt
1 tablespoon cooking oil
apple cider vinegar to taste
2 hard boiled eggs (chopped)
Directions:
1. Boil potatoes, onion, salt and oil in just enough water to cover. (You won't be draining).
2. When tender, mash with potato masher.
3. Stir in eggs.
4. Add vinegar to taste.
5. Best if left a little bit soupy.
