Vietnam Fried Rice

super easy way to use up leftovers
Ingredients:
3 cups uncooked rice
4 tbsp extra-virgin olive oil
1/4 pound chicken, thin strips
3 cloves garlic
1 tsp pepper
1 tsp sugar
1 tsp salt
1 tbsp soy sauce
1 large onion, diced
1 cup frozen mixed vegetables
2 eggs, beaten
Directions:
1. Cook 3 cups rice.
2. Heat in large skillet: 4 tbsp oil.
3. Add:
4. chicken strips
5. garlic
6. onion
7. salt
8. pepper
9. sugar
10. soy sauce
11. Stir fry until chicken is cooked through (no longer pink), about 1-2 minutes.
12. Add:
13. cooked rice
14. Stir fry 5 minutes.
15. Add:
16. 1 cup leftover or frozen veggies
17. Stir well into rice/ chicken mixture.
18. Just before serving, Add:
19. 2 eggs, beaten.
20. Over medium heat, stir carefully through rice until aggs are cooked.
21. Serve immediately.
