Vidalia Sweet Onion Grits

This is a nice grit recipe that is good for breakfast, brunch, lunch or dinner. Enjoy
Ingredients:
8 slices bacon
16 ounce can tomatoes undrained chopped
1 medium vidalia onion chopped
2 small green peppers finely chopped
1/4 teaspoon granulated sugar
6 cups water
1 teaspoon salt
1-1/2 cup regular grits uncooked
Directions:
1. Cook bacon slices in skillet until crisp then drain crumble and set aside.
2. Pour off drippings reserving two tablespoons in skillet.
3. Sauté onion and green peppers in drippings then stir in tomatoes and sugar.
4. Bring to a boil the reduce heat and simmer 30 minutes stirring occasionally.
5. Bring water and salt to boil then add grits and cook 20 minutes stirring frequently.
6. Remove from heat and stir in tomato mixture.
7. Spoon into serving dish and sprinkle bacon on top.
