Vidalia Onion And Swiss Cheese Casserole

With vidalia's in season, they are always on our table in one form or another
Ingredients:
3 cups vidalia onions, roughly chopped
2 tsp butter
2 tsp flour
1 cup chicken broth
1 (5 1/2 ounce) can evaporated milk
1/2 tsp salt
1/2 tsp pepper
1 cup swiss cheese, grated
1 cup cracker crumbs
butter to dot on top of casserole
Directions:
1. Preheat oven to 375
2. Boil onion chunks for 15 to 20 minutes
3. Drain and rinse
4. Melt butter in a saucepan
5. Stir in flour, broth and milk, stirring constantly until thickened
6. Add onions, salt and pepper
7. Put mixture in a 1 1/2-quart casserole dish
8. Top with cheese, then cracker crumbs
9. Dot with butter
10. Bake for 30 minutes
