Vicki 's Rhubarb Crunch

This was in Libby's old cook book.
Ingredients:
1 1/2 cups sifted flour
1 1/4 cups oatmeal
1 1/2 cups brown sugar
3/4 cup melted butter
1 teaspoon cinnamon
4 cups rhubarb
1 cup sugar
1 teaspoon vanilla
2 tablespoons cornstarch
1 cup water
red food coloring
Directions:
1. Mix flour, oatmeal, brown sugar, melted butter and cinnamon together until crumbly.
2. Press 1/2 of the mixture into a greased 9x13 pan.
3. Cover with rhubarb.
4. Combine remaining ingredients in saucepan; cook until thick and clear.
5. Pour cooked mixture over rhubarb.
6. Top with remaining crumb mixture.
7. Bake for 1 hour at 350 degrees Fahrenheit.
8. Serve with cream.
