I have a thing for pot pies. Love them, but they're not very good for you. I decided to try to make my own to see if it was a little bit better for you. My results are very yummy. Even my step-son, a very difficult to please critic, loved this. The interesting thing about this recipe is that you can make ahead the chicken/soup mixture, add the veggies, and freeze it and then later add it to the pie crust if you need a very no-fuss meal.
Ingredients:
2 lbs boneless skinless chicken breasts, cut into small pieces
1 (10 1/2 ounce) can campbell's cheddar cheese soup
1 (10 1/2 ounce) can cream of chicken soup
1 (10 ounce) package frozen mixed vegetables
2 (8 inch) double-crust pie crusts
Directions:
1. Mix together cans of soup and sautee chicken in soup on stove on medium heat.
2. When chicken is cooked through, remove from heat.
3. Add bag of veggies and mix inches.
4. Mix in frozen veggies to the soup/chicken mixture.
5. Cover with the other pie crust.
6. Put into pre-heated oven set at 350 degrees.
7. Cook for 45 minutes to an hour depending on if contents added to pie crust are frozen.
