Very Veg Garlic Barley

This is healthy and delicious.
Ingredients:
1 tbsp olive oil
1 cup uncooked pearl barley
1 cup v-8 juice
1/4 teaspoon white pepper
1 onion, chopped
3 cloves garlic, minced
1 red bell pepper, chopped
1 cup chopped mushrooms
2-1/2 cups vegetable broth (i usually add a bit more as needed)
Directions:
1. Heat oil in pot
2. Add vegetables and garlic. Saute for 5 minutes
3. Add all other ingredients.
4. Bring to boil and simmer for 30 minutes or until barley is tender.
