Very Low Fat Chocolate Chip Cookies

These Cookies have no butter in them. They are a slight bit chewier and have a different kind of texture than regular cookies, but heck there is no butter. I think they still taste pretty darn good. You really need to let them cool completely before eating for best results. This is still an experiment in the making but I thought I would still post the recipe for now and just keep making changes to it until I find the perfect no butter cookie. Enjoy!!!
Ingredients:
3/4 cup drained plain vanilla
15 ounces butter beans
1 1/4 cups sugar
1 1/2 cups brown sugar
2 eggs
2 tablespoons maple syrup
1 tablespoon skim milk
2 1/2 tablespoons vanilla
4 cups flour
2 teaspoons baking soda
3/4 teaspoon salt
2 teaspoons olive oil (optional)
1/2 cup chopped pecans (optional)
1 (12 ounce) package chocolate chips
Directions:
1. Preheat oven to 375 degrees.
2. Drain the plain yogurt in cheesecloth for 3-4 hours or until it is the same consistency as crisco.
3. Drain the butter beans and put in a food processor until creamy.
4. In a bowl combine yogurt, butter beans,sugar, brown sugar, eggs, syrup, milk, and vanilla. Mix until creamy.
5. Mix together all dry ingredients flour, baking soda, salt.
6. Slowly add dry mix into the creamy mixture. Once it is all creamed together add in chocolate chips.
7. Drop a spoonful of the mix onto a cookie sheet. Bake in oven for 9-10 minutes. Keep a close watch. All ovens are different.
8. Let cool completely before eating and enjoy :).
