I was skeptical at first that something so healthy could taste so delicious, but it does! Great for curry fans and dieters alike: this tasty Thai treat will not disappoint.
Ingredients:
1/2 lb. chicken, cubed (or more if desired)
1 medium potato, cubed
2 carrots, sliced
2 mushrooms, sliced
1 large stalk of broccoli, chopped into smaller pieces
1 tbsp soy sauce
2-3 tbsp curry powder
3 tbsp flour (or 1 tbsp corn starch)
2 cups (skim) milk
2 tbsp splenda (or sugar)
1 tsp salt
5 cloves garlic, chopped or minced
Directions:
1. Slice chicken and vegetables
2. Heat wok or skillet on medium-high heat
3. Add garlic and soy sauce
4. Add chicken and vegetables
5. Add curry powder, flour, sugar salt, and milk
6. Stir-fry until chicken is completely cooked
7. If vegetables are still too firm, reduce heat, cover and simmer
8. Feel free to add or omit any vegetables you'd like
9. Add additional milk and curry if needed for desired taste
10. Enjoy with a side of wheat basmati rice!
