Very Good Southern Potato Salad

This is a really good potato salad that has been in the family for years! It is really good warm or the day after!
Ingredients:
8 large russet or red potatoes, quartered
1 cup chopped celery
1 small green or red bell pepper, sliced in rings
1 small red onion, chopped
3 hard boiled eggs,chopped
1 small jar sliced green olives(do not drain)
dash of celery seed
dash of creole spice
salt and cracked black pepper to taste
1 tablespoon mustard(you can add more depending on taste)
1 bunch green onions, sliced (white and green parts)
5 slices of crisp cooked bacon(crumbled)
1 1/2 cup mayonnaise (good quality kind)
cracked black pepper to taste
1 container soft cream cheese with chives
*shredded cheddar cheese(optional)
Directions:
1. Boil potatoes until just tender(about 15 minutes)
2. Drain and allow to cool.
3. When potatoes are cool to touch, remove skins
4. In large bowl mix together the potatoes,mustard, green onions, celery, red onion, eggs, and olives.
5. Stir in cream cheese and mayonnaise.
6. Season with creole spice, celery seen, cracked black pepper and salt
7. Sprinkle bacon over top(if using cheese, sprinkle this on top too)
8. Sprinkle top with parsley and decorate with green or red bell pepper rings.
