Very Cheesy Casserole

Ingredients:
1 teaspoon vegetable oil
1 cup onion, chopped
3 garlic cloves, minced
1 cup mushroom, chopped
1 teaspoon dried basil
1 teaspoon dried thyme
1 teaspoon dried marjoram
1 teaspoon cumin
2 cups beans, cooked
2 cups brown rice, cooked
3 eggs, slightly beaten
2 cups low fat cottage cheese (or some combination of both) or 2 cups ricotta cheese (or some combination of both)
1/4 cup feta cheese, crumbled (optional)
2 tablespoons soy sauce
salt
black pepper
cayenne
2 medium tomatoes, sliced
1/2 cup parmesan cheese, grated
1/2 cup fine dry breadcrumb
Directions:
1. Preheat oven to 350°F.
2. Heat oil in large skillet; sauté onion, garlic and mushrooms until onion is nearly soft.
3. Add all remaining ingredients except final three. Mix well and spread mixture in a large greased or sprayed shallow baking dish.
4. Arranged tomato slices over the top. Mix together parmesan and crumbs and sprinkle over tomatoes.
5. Bake for 40 minutes.
