A beautiful cake and yummy too you can make it 4 layers like the picture or just 2 layers .......... courtesy nestles cookbook.....
Ingredients:
cake ...............
3- cups all-purpose flour
3 1/2 teaspoons baking powder
2- teaspoons pumpkin pie spice
1- teaspoon baking soda
3/4- teaspoon ground nutmeg
1/2- teaspoon salt
1 1/2 - cups granulated suagr
3/4- cup ( 1 1/2 sticks ) butter softened
3- large eggs
1 1/2 - cups libbys pure 100% pumpkin
1/2- cup evaporated milk
1/4 - cup water
1 1/2- teaspoon vanilla
maple frosting ................
11 ounces cream cheese
1/3- cup butter , softened
3 1/2- cups - sifted powdered sugar
2- 3 teaspoons maple flavoring
orange peel twists , fresh mint , chopped nuts for garnish............
Directions:
1. Preheat oven to 325 degrees f. grease and flour 2 9 inch - round cake pans
2. for cake ................
3. combine flour, baking powder, pumpkin pie spice, baking soda, nutmeg, and salt in a small bowl
4. beat granulated sugar and butter in largemixer bowl until creamy
5. add eggs; beat for 2 minutes
6. beat in pumpkin , evaporated milk, water and vanilla.
7. gradually beat in flour mixture
8. spread evenly into prepared pans
9. bake for 35 - 40 minutes or until a wooden pick comes out clean when inserted in center.........
10. cool in pans on a wire rack for 15 minutes , then remove to wire racks to cool completely........

12. for maple frosting
13. beat cream cheese and powdered sugar in a larger mixer bowl until fluffy add maple flavoring , mix well..........
14. ********************************************
15. to assemble cake ;....................
16. cut each layer in half horizontally , with a long , serrated knife
17. frost between each layer and on top od cake leaving sides unfrosted
18. garnish as desired
19. when making 2 layer cake frost sides and top and inbetween
20. 12 servings
