Yummy verde salsa that can be as hot as you want it. I also use it as a sauce for chicken while it grills. I make a lot and give it away or freeze it. It lasts at least 6 months in the freezer.
Ingredients:
about 2 lbs. of tomatillos (15 to 25, depending on size)
2 to 4 jalapenos (depending on how hot you want it)
1 to 2 tablespoons chopped cilantro
4 cloves garlic
juice of one lime
salt
1 to 2 tablespoons olive oil
Directions:
1. Peel, cut stems off, and rinse tomatillos well
2. Slice tomatillos in half and spread them on a roasting pan (I use a 'silpat')
3. roast in 450ยบ oven for 12 to 14 min. , let cool (7 or 8 min.)
4. while tomatillos are roasting, seed and cut jalapenos in small pieces (easier for the food processor to chop them)
5. wash and chop cilantro
6. peel garlic cloves and chop a little (again, easier for the food processor to finish the job)
7. after tomatillos are somewhat cooled, put them in food processor with cilantro, jalapenos, garlic and lime, turn on high until smooth
8. put in a small amount of salt to taste
9. turn food processor back on and stream in olive oil then 1 to 2 tablespoons water until it is a good consistancy.
10. let salsa cool and pour into jars.
