Venison Quotsausagequot Rolls

I don't normally do anything special with venison. But I found a couple recipes that I had.
Ingredients:
1/2 lb ground venison
1/2 lb cheap breakfast sausage
2 eggs
3 tbs parsley
2 tbs thyme
1 tbs rosemary
1 red onion, finely chopped
salt and pepper to taste
4 sheets puff pastry dough.
2 eggs, beaten for egg wash
Directions:
1. FILLING:
2. Mix venison, sausage, eggs, parsley, thyme, rosemary, onion, and salt n pepper in a skillet.
3. Sautee sausage mix over medium - high heat until browned, keeping the texture of the mixture fine .
4. Drain well and set aside to cool.
5. PASTRY:
6. Preheat oven to 350 degrees F.
7. Roll out each puff pastry sheet and cut each of the 4 sheets into 4 squares, yeilding 16 squares.
8. Spread the sausage mix over the surface of each of the 16 squares and roll up the dough jelly roll style.
9. Seal dough on the ends by crimping.
10. Place on baking sheet and brush with egg.
11. Bake until golden brown, about 15 mins
