I love these cheese filled corn based pancake/breads. One can buy the masa harina in ethnic grocers. It's a lime treated cornmeal flour. One brand is called Pan This particular recipe is from Recipezaar, but there are quite a few different versions around the world and I seem to love them all! Read more ! Might as tell you more: these can be boiled in water like dumplings and then pan fried. Or when browned, continue baking in a 400F for a little while longer to melt cheese. Essentially there is not much to cook except to melt the cheese and cook till brown Some people add spices or garlic but the plain version seems most popular. Often the soft dough center part may be removed and simply filled with cooked meats, stringy cheese( like mozarella), fried vegetables etc.and eaten like a hamburger. So eaten as snack, or street vendor food, these are delcious and comforting Also cheeses can even be any soft cheese like American besides mozarella Oh, I know people who grill these or place in the smoker and serve with barbecue sauce!!! Ingredients:
10 fluid ounces warm water or as needed
1/4 teaspoon salt
8 ounces masa harina flour ( no substitute)
4 ounces manchego cheese, ( a mild white spanish cheese ) gratedor crumbled
oil, for shallow frying
1 avocado, peeled and thinly sliced
2 tomatoes, thinly sliced
16 black olives, pitted and halved
Directions:
1. Place the flour and salt in a large mixing bowl and gradually add the warm water, mixing to form a stiff dough.
2. Add the cheese and knead the dough for a few minutes then form into 4 balls.
3. Flatten the balls to a thickness of about 1/2 inch.
4. Heat oil in a large frying pan.
5. Add the arepas and cook for 3-4 minutes on each side until crisp and golden, turning 3 or 4 times.
6. Drain on kitchen paper.
7. To Serve - split the arepas in half, place on serving plates and garnish with avocado, tomato slices and olives.
8. Note: andd i like to split in half and even add a slice of mozarella cheese!
