Velvet Mushroom Soup

For those who love mushrooms (like I do), and want something a little different, this is for you.
Ingredients:
2 1/4 cups mushrooms, sliced (about 8 oz.)
1/2 cup onion, chopped
1 cup fresh parsley, chopped
1/4 cup butter
1 tablespoon flour
1 2/3 cups beef broth
1 cup sour cream
Directions:
1. In a large skillet over medium-low heat, saute mushrooms, onion, and parsley in butter until onion is translucscent. Stir in flour, then gradually stir in broth.
2. Bring to a boil, stirring constantly. Reduce heat and stir in sour cream until well blended.
3. Serve.
