This soup is so simple. You can add or subtract most anything to it and it still comes out great. Healthy, quick, great tasting what more can we ask. Serve with a crusty bread yummmy
Ingredients:
1 medium onion, chopped
1 clove garlic, chopped or more if you like garlic like we do
bit of olive oil
2 cans good vegetable stock
2 cans diced tomatoes
1 can green beans (undrained)
1 can whole corn (undrained)
1 can mixed vegetables (undrained)
1 can beans (undrained) whatever you have on hand.i like black beans.
1/4 cup rice
1-2 bay leaves
italian seasoning to taste
v-8 juice to taste
Directions:
1. Saute the onion and garlic in olive oil.
2. Add the rest of the ingredients.
3. Season to taste with italian seasoning and bring to a boil.
4. Cover.
5. Reduce heat to low and cook about 20 minutes to cook the rice.
6. Serve hot
