A lot fat and low ww point soup that is easy to throw together. I puree a portion of the soup in a blender and return it to the pot to simmer to make the soup thicker.
Ingredients:
32 ounce of mixed vegetables
8 ounces butter beans
29 ounce of diced tomatos
32 ounce fat free chicken broth
4 cups of water
1 salt and pepper to taste
Directions:
1. Combine all ingredients in a large pot. Simmer until all the veggies are tender. Remove a couple of cups of the soup to a blender and puree. Return to pot and simmer another 30 minutes or so.
