Veggie Shepherd's Pie

Super fast and easy delicious one dish meal that appeals to non-vegetarians, too.
Ingredients:
5 potatoes
1/2 cup milk
3 tablespoons butter
1 large onion, chopped
1 garlic clove, minced
1 1/2 teaspoons dijon mustard
1 teaspoon dried thyme
1/2 teaspoon dried basil
salt and pepper
1 (14 ounce) can diced tomatoes
1 (14 ounce) can green beans, drained
1 (14 ounce) can sliced carrots, drained
1 (19 ounce) can cannellini beans, drained and rinsed
1/2 cup cheddar cheese
Directions:
1. Peel,dice and boil 5 potatoes for mashing.
2. Sauté onion and garlic in 2 T. butter in casserole pan.
3. Add: Dijon mustard, dried thyme, Dried Basil, salt and pepper.
4. Add: tomatoes, green beans, carrots, and cannellini beans.
5. Mix together.
6. Drain then mash potatoes with milk and 1 T. butter. Spread mashed potatoes over top of mixture.
7. Top with grated cheddar cheese.
8. Bake 25 minutes at 350.
