Ingredients:
1 avocado, chopped
1 tablespoon lemon juice
1 (14 ounce) can artichoke quarters in water, drained
2 (14 ounce) cans garbanzo beans, drained
1 cucumber, sliced
1 tomato, chopped
1 yellow bell pepper, chopped
1 head romaine lettuce, shredded into bite-size pieces
1 cup fat free cheese, shredded
4 ounces fat-free italian salad dressing
Directions:
1. Sprinkle lemon juice over avocado.
2. Toss together all ingredients.
3. Chill for several hours or overnight.
