Veggie Red Curry

Curry dish with potato, carrots, and other veggies. No need to use rice.
Ingredients:
120 grams potato
75 grams carrot
210 grams cauliflower
60 grams onion
100 grams mushrooms
7 grams red curry paste
4 oz. lite coconut milk
Directions:
1. Quarter a potato and slice.
2. Slice the carrot.
3. Put into a saucepan with a bit of water and simmer till tender.
4. Slice quartered onion
5. Slice mushrooms
6. Break the cauliflower into bite-size florets.
7. Throw onion and mushroom into a hot cast iron skillet.
8. While cooking, heat the lite coconut milk in a very small saucepan, whisk in the curry paste and let simmer for a few minutes.
9. Add the drained potato and carrots, the raw cauli, and about 1/4 cup water to the skillet with the onions and mushrooms.
10. Cover and let steam till cauli is tender and water is nearly gone.
11. Stir in the Red Curry Sauce and eat! Delicious
