Veggie Patty Pitas

Use any extra hummus as a dip for pita chips or fresh vegetables.
Ingredients:
1 (10-ounce) package veggie patties (such as gardenburger)
cooking spray
1/2 cup prepared roasted red bell pepper hummus
4 (6-inch) whole wheat pitas, cut in half
2 cups shredded lettuce
8 (1/4-inch-thick) slices tomato
16 (1/4-inch-thick) slices cucumber
Directions:
1. Heat a large nonstick skillet over medium heat. Coat veggie patties with cooking spray; place patties in pan, and cook 4 to 5 minutes on each side or until thoroughly heated and lightly browned. Cut each patty in half.
2. Spread 1 tablespoon hummus inside each pita half. Fill each pita half with a veggie patty half, 1/4 cup lettuce, 1 slice tomato, and 2 slices cucumber. Serve immediately.
