Veggie Jack Salad

A nice and simple summer salad. No mayo in this, but there is cheese, but it's still great for cook outs or picnics.
Ingredients:
2 medium cucumbers(or zucchini) sliced
2 medium tomatoes, wedged or cubed(or 1 pint cherry or grape tomatoes)
2 green onions, sliced
6oz monterey jack cheese, cubed
2t dressing quality olive oil
2t balsamic vinegar
dash of sugar
1-2t fresh herbs(basil, cilantro,oregano, thyme, chives, parsley, etc(any combination you like)
salt and pepper
Directions:
1. Combine veggies and cheese in large bowl and set aside.
2. Whisk together oil and vinegar, add sugar, salt and pepper and whisk well.
3. Add herbs and mix to break herbs and combine.
4. Pour dressing over veggies and toss to coat.
5. Refrigerate at least 1 hour.
