Crustless quiche with veggies and cottage cheese.
Ingredients:
5 eggs
2 cups low-fat cottage cheese
1/3 cup milk
1 cup mild cheddar cheese
1/3 cup onion
1/4 cup red pepper
1/6 cup green pepper
1/4 lb. bacon
1 tbsp. margarine
1 black pepper to taste
Directions:
1. Chop pepper, onion, and bacon. Saute in margarine.
2. Beat eggs and milk. Mix all ingredients together.
3. Spray 9 pie plate and put all ingredients in pan.
4. Bake at 350 degrees for 30 minutes or until cooked throughout.
