Vegetarian Chili.
Ingredients:
10 lbs spanish onions, diced
10 lbs red peppers
10 lbs green peppers
10 lbs kidney beans, cooked
5 lbs celery, diced
5 lbs carrots, diced
5 lbs red bulgur wheat
40 lbs tomatoes, strips
20 lbs tomato puree
8 cups tamari
2 cups lime juice
1 cup canola oil
1 cup olive oil
2 cups garlic
2 cups chili powder
2 cups oregano
2 cups cumin
6 bunches cilantro
8 ounces chipotle peppers
8 jalapeno peppers
2 tablespoons crushed red pepper flakes
2 gallons water
Directions:
1. Saute all veggies in oil.
2. Add wheat, tomatoes, tomatoes and water, bring to a boil.
3. Add all spices, cooked beans and simmer for one hour.
4. Add cilantro and lime juice.
