Very yummy veggie chili
Ingredients:
1/2 cup chopped onion
1/4 cup red bell pepper
1/4 cup green bell pepper
1 portabella mushroom cap, chopped
16 ounces black beans
16 ounces kidney beans
32 ounces chili hot beans
16 ounces petite diced tomatoes
8 ounces crushed pineapple
2 teaspoons olive oil
1 cup chopped carrot
1 stalk celery, chopped
mild chili powder
Directions:
1. heat oil in pan, cook onion, peppers, carrots, celery and mushrooms until tender, throw all ingredients into crock pot and cook all day on low.
