Easy vegetable casserole, perfect for a pitch in or as a side dish to family dinner, experimenting encouraged!! I'll add chicken or ground beef sometimes for a complete meal. Happy cooking!!
Ingredients:
2 cans of green beans
2 cans of kernel corn
1 can of peas
1 large can of veg-all
1 cup of mayo (low fat fine, just not miracle whip)
8oz shredded cheeze of your choice
1 med onion diced small (sometimes i use 3 tblsp minced onion for convenience with good results)
(opt) 2 tblsp garlic pwdr
salt and pepper to taste
1 roll of ritz crackers
1 stick of butter
Directions:
1. Strain vegetables and place in large mixing bowl, add mayo, cheeze, onion, and spices if so desired. The mayo should just barely coat the mixture, start small and add more for your taste.
2. Melt stick of butter in micro, crunch Ritz crackers and add to melted butter. Stir well and set aside.
3. Place veggie mixture in 13x9 ungreased baking pan. I always use glass so cooking time is relative. Top with butter/Ritz cracker mixture.
4. Bake on 350deg for 30min or until crackers are light brown and mixture is bubbly.
