I got this recipe from a friend of mine a long time ago. It is easy to make and is delicious.
Ingredients:
10 ounces frozen broccoli
10 ounces frozen cauliflower
4 ounces sliced mushrooms, drained
8 ounces sliced water chestnuts, drained
1/4 cup diced onion
1/4 cup minute rice
1/4 cup skim milk (any)
1 (10 3/4 ounce) can cream of broccoli soup (you can use reduced fat)
1 teaspoon butter
8 ounces velveeta cheese, cut up (you can use 2% velveeta or use swiss cheese)
Directions:
1. Rinse frozen vegetables under cold water and drain.
2. Mix all ingredients together and place in a casserole dish.
3. Bake at 375 degrees uncovered for 45 minutes. Stir occasionally.
