Vegetarian Sausage Rolls Without Cheese!

Found this recipe on the internet. To make it vegan substitute egg replacer.
Ingredients:
1 cup carrot, diced
1/2 large onion, chopped
1 cup zucchini, cubed
1 large potato, cooked and chopped
3 garlic cloves
1 cup breadcrumbs
1/2 cup rolled barley or 1/2 cup rolled oats
1/2 teaspoon salt
1 teaspoon worcestershire sauce
1 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon black pepper
3/4 teaspoon cayenne
1/2 teaspoon curry powder
3 large eggs
Directions:
1. Put garlic cloves into food processer. Run till finely chopped.
2. Add carrot and pulse.
3. Add remaining ingredients and pulse till blended and fine.
4. Use puff pastry or your favorite pie dough. Bake at 375 for 40 minutes. (I think 40 minutes is too long) Keep an eye on it until golden brown.
