The raisins in this dish add a delicate sweetness, that I just love.
Ingredients:
1/2 onion chopped
1/2 green pepper chopped
1/4 cup olive oil
2 cups brown rice
4 cups water
1/2 cup raisins
Directions:
1. Heat oil in a 2-3 quart pot.
2. Add the onions and green peppers, saute' until the onions are translucent.
3. Stir in the rice and raisins.
4. Add the water, bring to a boil.
5. Cover and turn heat down to a simmer.
6. cook for about 1hr.15mins.
7. (You can also do this in a rice cooker, so the cooking time will be shorter. Just make sure that you still do the first 3 steps, then pour it in the rice cooker and add the water)
