Vegetarian Quiche
Ingredients:
1 cup whole wheat pastry flour
5 tbsp cold water
2 tbsp oil, smart balance
1 cup vegetarian sausage crumbled
1/2 cup shredded cheddar cheese, reduced fat, 2% milk
1 1/2 cup egg beaters
1/8 tsp onion powder
1/8 tsp paprika
Directions:
1. Please note: use Morningstar Farms Meal Starters Sausage-Style Recipe Crumbles instead of tofu to lower fat/calories and increase taste.
2. Combine pastry flour, water, and oil to form a ball. Flatten dough and press it into a 9 pie pan sprayed with non-stick cooking spray. Prick bottom of crust with a fork and bake at 375 for 5 minutes.
3. Spread vege sausage crumbles on bottom of crust. Sprinkle with onion powder. Top this with cheese. Then pour egg beaters on top. Sprinkle top with paprika and return to oven for 25-35 minutes, until done.
