1-2 persons as an appetizer or main meal for 1 person (ME)
Ingredients:
beetapple w o w drink (looks like burgundy - taste the power).
prepare one day ahead.
1 medium size peeled beetroot, cut into quarters and boil in 1 litre water 20 mins.
cool beetroot in the water overnight and slice when needed. (reserve the liquid for the drink).
vegetarian power booster dish
1 tablespoon olive oil
1/2 cup sliced leek
3 celery sticks chopped
1 thinly sliced carrot
3 cloves chopped & sliced garlic
1 teaspoon finely chopped raw ginger
1 cup cooked baked beans in tomato sauce
4 slices of cooked beetroot
2-3 slices sundried tomato and basil flavoured wholegrain rice cakes (broken into 1/4 bits)
Directions:
1. Heat oil in frying pan
2. Add the leek and fry until wilted
3. Add celery, carrots, garlic then ginger - stir for several minutes
4. Add beans and heat through
5. Serve on a warmed up plate,
6. Add slices of beetroot (cool slices are OK too)
7. Arrange the rice cake bits around the edges
8. Serve with glass of beetapple WOW juice.
9. Juice: Into a wineglass pour 1/2 the cold beetroot juice and 1/2 apple juice. (Sparkly is punchy too)
10. First time I made this, but will try cooking the beetroot and apples together - more homemade.
