1 medium size peeled beetroot, cut into quarters and boil in 1 litre water 20 mins. |
cool beetroot in the water overnight and slice when needed. (reserve the liquid for the drink). |

1/2 cup sliced leek |
3 celery sticks chopped |

1 teaspoon finely chopped raw ginger |
1 cup cooked baked beans in tomato sauce |
4 slices of cooked beetroot |
2-3 slices sundried tomato and basil flavoured wholegrain rice cakes (broken into 1/4 bits) |
