A healthy lunch or light supper.
Ingredients:
2 whole wheat pita bread
1/3 cup hummus
2 leaves romaine lettuce, shredded
1 cup fresh spinach leaves, shredded
1 medium tomato, coarsely chopped
1/2 cup cucumber, peeled and chopped
1/4 cup scallion, minced
1/2 cup alfalfa sprout
Directions:
1. Slit open the pitas. Spread the insides of each pocket with hummus.
2. Stuff each pita with half of remaining ingredients.
3. Enjoy!
