Vegetarian Minestrone Soup

Thick and chunky and so flavorful. It is even better when reheated, just add more water as the noodles soak it up.
Ingredients:
3 tablespoons oil
1 cup diced onion
1/2 cup diced celery
3/4 cup diced carrot
1 teaspoon crushed garlic
1 cup cubed eggplants or 1 cup cubed zucchini
1 cup chopped tomato
2 teaspoons salt
1/4 teaspoon pepper
1 teaspoon oregano
1 teaspoon basil
1/4 cup parsley flakes
2 cups tomato sauce
4 cups water or 4 cups stock
1/4 cup white wine
1/2 cup ditalini
Directions:
1. Heat oil and sauté celery, onion, and carrots for 10 minutes.
2. Add remaining ingredients except pasta.
3. Simmer for 30 minutes.
4. Add pasta and simmer another 10 minutes.
