Vegetarian Jollof Rice

A very tasty and healthy rice dish. It is a great one-dish meal.
Ingredients:
2 onions, chopped
1 green pepper, chopped
1 red pepper, chopped
2 garlic cloves
10 ounces mushrooms, sliced
2 carrots, diced
1 (14 ounce) can chopped tomatoes (or use fresh)
2 tablespoons tomato paste
1 teaspoon cayenne pepper (to taste)
1 teaspoon turmeric
1 tablespoon thyme
1 lb brown rice
4 cups vegetarian broth
1 cup frozen green pea
cilantro (optional) or parsley (to garnish) (optional)
Directions:
1. Make broth if using bouillion. (Bring 4 cups of water to a boil. Add bouillon and stir).
2. Simmer the onions, peppers, garlic and mushrooms in 1/2 cup of the broth to soften.
3. Stir in the carrots, tomatoes, spices, rice and remaining broth; bring to a boil and simmer 45 minutes, or until the rice is tender.
4. Just before serving, adjust the seasonings if needed, stir in the green peas and garnish with cilantro or parsley.
