Great beans and rice based meat substitute. Goes great on Tacos, eggs, or anything else ground meat goes in.
Ingredients:
9 2/5 oz white onion
5 oz red bell pepper
5 1/2 oz yellow squash
2 3/10 oz carrot
2 oz feta
425 g black beans
2 tbsp tahini
2 eggs
1 cup brown rice
1 slice whole wheat bread
Directions:
1. Chop and blend all ingredients in a food processor.
2. Cook until desired consistency.
3. Vegies tend to add a lot of unwanted water to the mix. You may need to find a way to minimize this.
