Vegetarian Fried Rice

No meat fried rice dish.
Ingredients:
1 cup yellow onion, small cube
2 cups zucchini, small cubes
1 cup japanese eggplant, small cubes
1 cup red bell pepper, small cubes
4 garlic cloves, minced
12 cups cooked rice, day old
1/4 cup teriyaki sauce
oil
salt
2 stalks green onions, minced
Directions:
1. In a wok coat with oil add vegetable mixture and saute until the vegetable is Al dente.
2. Add in cooked rice and sauté and lightly toast the rice.
3. Add teriyaki sauce and add salt to taste. Mix in green onion and blend.
