My husband loves this dish, despite the fact that he is not a vegan. It is low in cholestrol also. I first found a similar recipe in a cooking magazine, but changed most of the ingredients as I do not care from yellow onions and green peppers. I also added a few ingredients, such as tomatos and mushrooms, as I wanted it to be a little more colorful.
Ingredients:
3 yellow peppers, washed and sliced
2 -3 red onions, sliced
1 -2 garlic clove, finely chopped
2 cups grape tomatoes
1 cup mushroom, with stems removed, sliced
2 tablespoons olive oil
1 (1 1/4 ounce) package fajita seasoning mix
1 package of 12 flour tortilla
1 (16 ounce) can refried beans
Directions:
1. Preheat oven to 375.
2. Layer first 7 ingredients in a 13 by 9 pan.
3. Roast at 375 in oven for 45 to 60 minutes, depending on how you done you prefer your vegetables to be. Stir occasionally throughout cooking time.
4. Heat refried beans or black beans in a microwave. Place desired amount of beans on tortilla shell and top with vegetables.
