Vegetarian Cutlets ( Potato and Nut ....really!!!)

Yummy Cutlet shaped nutty burgers! Can be frozen too. I serve this with an asparagus sauce.
Ingredients:
125 g onions (chopped fine)
1/2 cup sunflower oil (or butter)
750 g potatoes (mashed with no milk added)
3 egg yolks
250 g walnuts (ground)
150 g cashews (ground) or 150 g hazelnuts (ground)
1 teaspoon yeast extract
1 teaspoon mixed herbs
flour
beaten egg
breadcrumbs
Directions:
1. Cook the onion in the oil until lightly coloured.
2. Mix the potatoes with the egg yolks, nuts, yeast extract, salt and pepper.
3. Add the onions.
4. Place mixture onto a floured board, divide and shape into cutlets.
5. Flour, egg and crumb the cutlets and fry in hot oil until golden brown.
6. An asparagus sauce would be suitable to serve with this recipe.
